Mushroom & Spinach Quinoa w/ Chickpeas

This meal comes together really quickly meaning that it's perfect for suppers on those crazy days when you're short on time! It's quick to throw together because it has just a small list of ingredients yet is full of flavour!

Serves 4 people

5-10 minutes prep time

15 minutes cooking

ready in less than 30 minutes!

 

Ingredients

  • 1 cup chopped onion
  • 2 minced garlic cloves
  • 6 cups of sliced mushrooms
  • 4 cups of spinach
  • 2 tbsp of water or veggie stock, for sautéeing
  • Soy sauce to taste, or use amino acids
  • 2 cups of cooked chickpeas
  • 4 cups of cooked quinoa
  • salt and pepper, to taste

 

Directions

  1. Warm a medium frying pan on medium heat and add the water/veggie stock.
  2. Add the onions and garlic and sautée until translucent.
  3. Add the mushrooms and sautée until cooked.
  4. Add the cooked quinoa and chickpeas.
  5. Toss everything together with a few splashes os soy sauce/amino acids (roughly 1/4 cup - but totally your preference).
  6. Then add the spinach and toss until wilted.
  7. Add any salt/pepper to your desired taste!
  8. Serve and enjoy!
