Oil-Free Blender Cup Hummus

Everyone loves a great hummus.  It's so versatile and delicious. Plus, if you eat a plant-based diet it's a great way to get a serving of protein into your body without even thinking about it!  I'm really making an effort to reduce oils in my lifestyle, so hummus was a great place to start since in the past, I've always added SO much to make it smooth!  This recipe takes only a few minutes in your blender and is made super convenient by using cooked chickpeas.  If you buy them canned, this is convenient but can get pricey.  I recommend buying them dry and then using my quick meal prepping tip for batch cooking legumes to have some ready every week so that you can have fresh hummus as soon as that craving strikes! Here's how I make mine.

Ingredients

  • 1.5 cups of cooked chickpeas (or 1 15 oz can)
  • The liquid from the cooked chickpeas (aquafaba)
  • 1 clove of garlic, peeled
  • 2 tbsp of lemon juice
  • 1/2 tsp of each salt & pepper
  • 1/2 tsp of paprika

Instructions

  1. Put all ingredients into a blender along with a 3/4 cup of aquafaba.  This is the liquid found in the can of cooked chickpeas or produced after you cook your chickpeas at home.
  2. Pulse quickly a few times to get the ingredients moving around, then blend until smooth.
  3. You may have to add more aquafaba to get it smooth and scrape down the sides of your blender or food processor to ensure that it's all well-incorporated.

Notes

  • Feel free to add more or less garlic as per your tastes.
  • Add any ingredients that you like to your hummus, such as roasted red pepper, roasted eggplant, roasted garlic, or jalapenos!
