California Shredded "Pork"

Who doesn’t love a good, pulled pork meal? I used to LOVE these growing up. Slathered in BBQ sauce and smashed between two buns with a side of coleslaw - takes me back to my teen years....

My teen years really weren't a great time for me, to be honest - I was struggling with way too many period problems that left me in fear of my period every month and trapped in my body, thinking I was doomed to suffer for life.

When I took meat and dairy out of my diet, I really noticed a significant change in my periods - in a really good way! But I missed the old-time comforts of pulled pork.  So here's a plant-based, hormone-friendly version, made from mushrooms, that hits the spot every time!

Ingredients:

✨ 3-pound portobello mushrooms, cut into 2” pieces
✨2 tsp smoked paprika
✨Sea salt and black pepper, to taste
✨1/4 cup apple cider vinegar
✨1/4 cup apple juice
✨1/2 cup of water
